This is due to the waste grease and food solids remaining in the drain that will harden over time. 

The hardened grease and food solids will cause a blockage leading to a backup of wastewater into your premises. This backup will cause foul odors and also harmful contamination. If there is a blockage in the sewer line, it might cause a backup leading to an overflow.  This will hurt the environment and, in some cases, might also damage neighboring establishments.
